Bring 2 cups of water to boil in a medium-size pot. Boil beets and salt to taste over high heat for 15 minutes. Once tender, remove from heat.
Remove skin from beets and cut into cubes. Set aside.
Next, put half the avocado on each slice of toast and salt to taste.
Then evenly distribute the red and yellow cubes of beets on top of each slice of toast.
Crumble 1/4 cup feta cheese on each slice of toast and serve.
